Easy Banana Cake Recipe


This recipe makes 2 8” banana cakes

Banana 10 medium sized (use 6 if large)

Flour 5 cups

Eggs 6 (medium size)

Sugar 1 1/2 cups

Oil 1 1/2 cups

Buttermilk 2 cups

Baking soda 2 tsp

Baking powder 2 tsp

Molasses 1 tbsp (optional)

Vanilla 2 tsp

1/4 cup Raisins or chocolate chips to top (optional)

Top tip:

Make buttermilk ahead of time (see recipe in blog)

Mash banana ahead of time

Preheat oven to 180 degrees C

Sieve dry ingredients and set aside. Whisk eggs, add oil and buttermilk, mix well, add sugar, vanilla and molasses and mix well. Create a well in the dry ingredients and add wet, mix with spatula (don’t over mix), add mashed banana and pour into 2 8 inch rounds. Top with bananas sliced vertically and speckle with raisins or chocolate chips for a nice finish. Bake for 40-45 mins
