King cakes may look complicated to achieve but they are surprisingly easy to make. Follow my simple recipe and try to make one yourself and share pictures with me about how that goes. Happy baking!
INGREDIENTS
Milk 1 cup
Yeast 2 tbsp
Butter 1 cup (227g)
Flour 4 cups
Sugar 1/2 cup
Egg yolks 5
Salt 1/2 tsp
Vanilla 1 1/2 tsp
Cinnamon 1 tsp
Nutmeg 1/2 tsp
CINNAMON SUGAR
Butter (softened) 4 tbsp
Sugar 1/3 cup
Cinnamon 1 tsp
Salt pinch
ICING
Icing sugar 2 cups
Milk 2-3 tbsp
Vanilla 1/2 tsp
PROCESS
Proof: preheat oven to 48 degrees C
Warm milk to about 110 degrees F
Place in mixing bowl with yeast and sugar, whisk and set aside for 10 minutes to proof.
Once proofed, add the rest of the ingredients and knead on low for about 7-10 minutes or until dough pulls away from side of bowl.
Place in warm oven and let rise for at least an hour. This rose for 2+hrs
Place on floured surface (silicone mat) and flatten (with hands and finish off with rolling pin) to about a 10x20” rectangle and then add cinnamon sugar; roll and then form into a log (as shown below) then bring that log around to form a circle/ring (there are many ways to achieve this - in this case I split the log in 2 and formed a loose 2 strand braid. Once ring was formed, I pinched the 2 ends tightly together) and let rest for at least 30 mins while you preheat your oven to 170 degrees C.
Bake for about 30-35 mins and bring out of oven to cool completely before icing and sanding the top
